Embark on trying a nutritious recipe

Registered Holistic Nutritionist, Julia Davie, is sharing one of her favourite nutritional meals that is easy to make and truly delicious.

  1. Broccoli and Cheddar Crustless Quiche

Looking for a quick and nutritious lunch or dinner recipe that is perfect for any trimester? We’ve got you covered! This crustless quiche recipe is delicious, versatile, and family-friendly. Eggs are rich in protein and choline, and broccoli is an excellent source of folate. This quiche is a prenatal nutrition powerhouse!

Ingredients

  • 10 – 12 organic eggs
  • 1 cooking onion, diced
  • 1 tbsp. coconut oil or butter plus some for greasing
  • 2 cups broccoli, washed and cut into florets
  • 1 tbsp. water
  • 1 cup cheddar cheese, grated
  • Salt and pepper

Directions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Grease a large pie plate with butter or coconut oil.
  3. Melt coconut oil or butter in a medium-sized frying pan over medium-high heat.
  4. Fry onion until translucent.
  5. Add broccoli and water. Fry, stirring, until water has evaporated. Broccoli should still be crisp but lightly cooked.
  6. Crack eggs into a large mixing bowl and beat. Add cooked onions and broccoli and shredded cheese to egg mixture and season with salt and pepper.
  7. Pour the entire mixture into a greased pie plate.
  8. Bake, uncovered, for 30 minutes or until eggs are set.
  9. Cool for 10 minutes before slicing and serving.
